Honey Pear Tarte Tatin

The pears were arranged carefully, though no one would see them until the tart was turned. Beneath them, maple and fruit slowly became caramel; cardamom cracked in the warmth; black tea waited beside the stove. Everything lovely was happening out of sight.

Pear pieces and generous slices give the blend a soft, orchard sweetness. In the cup, the fruit feels warmed rather than fresh—silken, fragrant and beginning to caramelize at the edges.

Maple and caramel notes recreate the defining pleasure of tarte tatin: fruit cooked beneath its crust, then turned to reveal a glossy, amber surface.

Black tea gives the blend its polished tannin, while pu-erh introduces a deeper, earthier register. Together, they evoke the darkened base of a well-used pan: warm, seasoned and rich with everything cooked before.
